Herb-Infused Gin Chicken with Lemon and Garlic

Herb-Infused Gin Chicken with Lemon and Garlic:

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1/4 cup gin
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp fresh thyme, chopped (or 1/2 tsp dried thyme)
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried rosemary)
  • Salt and pepper to taste
  • Lemon wedges and fresh herbs for garnish

Instructions

  1. Marinate the Chicken:
    • In a small bowl, whisk together the gin, olive oil, lemon juice, garlic, honey, thyme, rosemary, salt, and pepper.
    • Place the chicken in a shallow dish or resealable plastic bag, then pour the marinade over the chicken.
    • Marinate for at least 30 minutes (up to 2 hours in the refrigerator for more flavor).
  2. Cook the Chicken:
    • Preheat the oven to 400°F (200°C).
    • Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil.
    • Remove the chicken from the marinade (reserving the marinade) and sear each piece for about 2-3 minutes per side, until golden brown.
  3. Bake the Chicken:
    • Pour the reserved marinade over the chicken in the skillet.
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Serve:
    • Remove from the oven, garnish with lemon wedges and fresh herbs, and spoon any remaining pan sauce over the chicken.

This Herb-Infused Gin Chicken with Lemon and Garlic combines the aromatic gin flavor with fresh herbs and a hint of lemon, creating a flavorful, elegant dish perfect for any occasion.
