Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup Buffalo sauce (adjust for spice preference)
- 1/4 cup flour
- Salt and pepper, to taste
- 2 tbsp olive oil or butter
- 4 slices cheddar or provolone cheese
- 4 sandwich buns (brioche buns work great)
- 1/2 cup ranch or blue cheese dressing
- 1 cup shredded lettuce
- 1/2 cup sliced tomatoes
- Optional: sliced pickles, red onion slices
Instructions
- Prep the Chicken:
- Place the chicken breasts between sheets of plastic wrap and gently pound until they’re about 1/2 inch thick.
- Season the chicken with salt and pepper, then dredge lightly in flour to create a light crust.
- Cook the Chicken:
- In a skillet, heat the olive oil or butter over medium heat.
- Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/75°C).
- Add Buffalo Sauce and Cheese:
- Once the chicken is cooked, pour the Buffalo sauce over the chicken in the skillet, flipping to coat both sides.
- Place a slice of cheese on top of each chicken breast and cover the skillet for a minute to let the cheese melt.
- Assemble the Sandwiches:
- Spread ranch or blue cheese dressing on the bottom half of each bun.
- Place a Buffalo-coated chicken breast on each bun, then add shredded lettuce, sliced tomatoes, and any other toppings you’d like (such as pickles or red onions).
- Top with the other half of the bun.
- Serve:
- Serve immediately with extra Buffalo sauce or a side of fries.
