Buffalo Chicken Dip

Ingredients

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup Buffalo sauce (adjust for spice preference)
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions (for garnish)
  • Optional: Additional blue cheese crumbles for topping

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Mix the Dip Ingredients:
    • In a large mixing bowl, combine the shredded chicken, softened cream cheese, Buffalo sauce, and ranch or blue cheese dressing. Mix until well combined.
  3. Add the Cheese:
    • Fold in the shredded cheddar cheese and mozzarella cheese, reserving a little cheddar for topping.
  4. Bake the Dip:
    • Transfer the mixture to a baking dish and spread it evenly. Sprinkle the reserved cheddar cheese on top.
    • Bake for 20-25 minutes, or until the dip is hot and bubbly.
  5. Garnish and Serve:
    • Remove from the oven, garnish with chopped green onions and blue cheese crumbles if desired.
    • Serve hot with tortilla chips, celery sticks, carrot sticks, or crackers.
