Portobello Mushroom Cooked with an IPA

Portobello and IPA?

Oh yes, the rich and meaty portobello mushroom. Not everyone is a mushroom fan, but I could eat mushrooms all day every day. I am far from being a vegan, but if I were, mushrooms would be my new steak. I’ll be honest, I was skeptical about using an IPA for this recipe, but it turned out absolutely amazing. The IPA truly complimented the already rich and meaty flavor profile by adding a little tangy bitterness. I hope you enjoy this recipe as much as I have!!!

Ingredient List:

  • 1 or 2 Portobello Mushrooms
  • 3 Tbsp Olive Oil
  • 1/4 Cup IPA (Hazy or Juicy)
  • 1/2 Tbsp Paprika
  • 1 Tsp Garlic Powder
  • 1 Tbsp Dried Coriander
  • 1 Tsp balsamic
  • Salt and Pepper to tast

Preparing the Mushroom:

Step 1- Pop the stem off the mushroom, I usually just grab it and break it off, but be careful not to damage the rest of the mushroom.

Step 2- CLEAN the mushroom by running it under cold water and gently washing it off with your hands, pat it dry with a paper towel.

Step 3- Grab a sauce pan and add your Olive oil. Set the heat to medium. Uncovered for now.

Cooking the Mushroom:

Step 1– When the olive oil is up to temperature, add your Mushroom, with the mushroom gills facing down. This will allow the gills to soak up a little pit of the oil why gently frying the edges. After 3-5 minutes, flip the mushroom onto the cap. Cooks for an additional 3-5 minutes on this side.

Step 2– Add your IPA, Paprika, Garlic powder, coriander and balsamic. Dump all of the ingredients around the mushroom, not on it. This is important so the mushroom doesn’t soak all of the ingredients uncooked. Grab a wooden spoon and stir around the mushroom to mix the ingredients. Now put the burner on Low and cover the sauce pan for 3-5 minutes

Step 3– Flip your mushroom(s) gill side down and let them cook for another 3-5 minutes, still covered.

At his point your portobello mushrooms should be slightly wrinkly and cooked thoroughly. You can now remove them from the pan and add your salt and pepper if desired.

Step 4- Enjoy your Portobello Cooked with IPA!!!!
