Crispy Potato Chips Soaked in White Wine

Why Wine Instead of Vinegar?

Chances are this isn’t the first “Crispy Potato Chips” recipe you’ve seen. There are millions of them online, because in reality, making potato chips at home is an easy task. So why did I decide to use white wine? Besides the fact that I write recipe blogs using alcohol, I think they turn out better than the ones soaked in vinegar. Just like vinegar, the alcohol in the wine will help give you that crunch you are after but with a distant taste of wine.

Ingredient List:

  • Potatoes (Duh)
  • 1 tsp Salt (Himalayan or Seasalt is fine)
  • White Wine (Sauvignon Blanc, Chardonnay, Pino Grigio, Just make sure its a dry white wine)
  • Water
  • Ice
  • Salt and Pepper (Or whatever you choose to season them with once they’re fried)
  • Frying Oil (I personally use Vegetable Oil, but any frying oil will do)
  • Thermometer for Frying oil (Optional)

How to Make:

Step 1– Get out the cutting board and slice the potatoes about a 1/16 of an inch thick

Step 2– Add Ice to the bottom of a large bowl, Just so it’s enough to make an ice bath for the potatoes.

Step 3– Add the thin, raw, potatoes to the ice and dump cold water over it. Now, let them soak in this ice bath for 1 – 1.5 hours, you’ll notice that the water will get cloudy.

Step 4– Strain the water from the potatoes and and rinse off the potatoes under cold water so they are nice and clean. Now it’s time for the second round of soaking.

Step 5– With the potatoes in the strainer, add a Teaspoon of salt to the large bowl that you dumped the water from, now you can add the potatoes back into the bowl.

Step 6– Depending on the size of the bowl and the amount of potatoes, the amount of Wine and Water will vary, fill the bowl up with 1/2 water and 1/2 wine. Now let it sit for another 1 Hour.

Step 7– After the potatoes have soaked in the wine, salt and water for 1 hour, you can lay them all out on a paper towel and pat them dry. It’s important that they are dry so you don’t get burnt from the grease!

Frying Instructions:

Step 1– Fill up a large sauce pan about half way with Oil, start by setting the burner to medium, you want the chips to fry at about 300 F or 150 C. If you don’t have a frying oil thermometer, test with one of your raw chips, you should see the chip rise to the surface after a couple seconds and bubble, but it shouldn’t start turning brown right away.

Step 2– Once you’ve determined that the oil is the right temperature, add 10 – 15 potato slices into the hot oil, they should take about 3-5 minutes to cook, but you should pull them out once they are golden brown.

Step 3– Put them in a dry paper towel to cool, the dry paper towel should help soak up any excess grease, I also prefer to add my seasonings at this point so they will stick better to the chips. Once they are cooled down, toss them into a Bowl and enjoy!!

DON’T DISCARD THE OIL; YOU CAN FILTER IT AND ADD IT BACK TO THE CONTAINER FOR FUTURE USE!!!! (Or throw it away, I don’t care what you do. Just a money saving tip)
